Marinated Heirloom Tomato & Burrata Toast

Ingredients
For the marinade:
- 1 tablespoon (15 milliliters) olive oil
- ¼ cup (about 6 grams) fresh basil
- ¼ cup (about 8 grams) fresh chives
- ¼ cup (about 5 grams) fresh mint
- 3 tablespoons (42 grams) mayonnaise
- 2 tablespoons (27 grams) capers, finely minced juice from ½ lemon
- 1 clove garlic, minced
- ½ teaspoon (1 gram) black pepper
- ½ teaspoon (about 2 grams) salt
For the toasts:
- 8 ounce (227 grams) ball burrata cheese
- 2 to 3 heirloom tomatoes, roughly chopped
- 2 slices bread of choice
- ½ teaspoon (about 1 gram) chili powder
What You'll Need
Directions
Combine the olive oil, basil, chives, mint, and salt in a mortar. Add basil, chives and mint and grind into a smooth paste using a pestle. Alternatively, pulse the ingredients in a small food chopper until finely combined.
Whisk the herb-oil with the rest of the marinade ingredients in a medium bowl. Toss the chopped tomatoes in the marinade until well coated.
Using The Two Slice Precision Toaster, toast the slices of bread to desired setting — I love setting four.
Tear the burrata in half and top each slice of toasted bread with one half. Spoon the marinated heirloom tomatoes over the burrata. Sprinkle with chili powder and enjoy!
